This will be the first winter with the raised beds I built inside the greenhouse - I wonder if these lettuce plants will tough it out if I treat them as cut-and-come-again, rather than digging up the whole plant when it's time to harvest?

Beautiful lettuce. If you trim off some of the larger, outside leaves the plant will continue to grow. I do this with my spring planted lettuce and often times they will continue to produce into the summer until the heat causes them to bolt.
