Yummy garden goodness for dinner

Wow. Dinner was gooood tonight! You should be able to do your own take on it with upcoming shares...

Get a big pot of salted water boiling and add a ~1 lb box of pasta (we used radiatori).

Put about 1/2 to 1 cup of olive oil in a pan /skillet and get it warming over low to medium heat.

Toss in a bunch of minced garlic and some sliced squash. Eggplant would also be good. Too high a heat would scorch the garlic - ew gross.

Toss in some chopped up tomatoes. - I used a mix sickly tiny red tomatoes and chocolate cherry tomatoes.

Also toss in a handful of mixed minced herbs, mostly parsley and basil with a touch of rosemary and thyme.

Add a pinch of pepper and maybe a bit of grated parm.

Oh yeah, when you're about to drain the pasta scoop out about a cup of the starchy cooking water, and add that to the pan just as all the veggies, garlic, oil, herbs, etc are wrapping up. The juice of half a lemon was squeezed in. A pinch of crushed red pepper got added as well.

In our case we also had a leftover grilled chicken breast plus half a rotisserie chicken - all the meat from those got chopped and added near the end - just to warm the meat.
Serve all the stuff in the pan over the pasta. Yuuuum! The homegrown garlic seem to have more kick than the storebought, and yet as garlicky as it was i think we could've had more than the three cloves I used. Mmmmmm - garlic!
